Black Bean Salad

Fresh and festive — perfect for summer!
Ingredients
  • 2 red bell peppers, diced
  • 2 cloves garlic, minced
  • 2 tablespoons minced shallots (one medium shallot)
  • 2 teaspoons salt
  • ¼ teaspoon cayenne pepper
  • 2 tablespoons sugar
  • 9 tablespoons extra virgin olive oil
  • 1 teaspoon lime zest
  • 6 tablespoons fresh lime juice (1 or 2 limes)
  • ½ cup fresh cilantro, chopped
  • 1 bag white and gold corn, steamed, drained and rinsed
  • 2 15-ounce cans black beans, drained and rinsed
  • 2 avocados, chopped
Instructions
  1. Prepare all the ingredients and combine them in a large bowl. Let the mixture sit in the refrigerator for a couple hours. Before serving, add in the chopped avocados. Serve with tortilla chips.
Notes
The salad gets better the longer it sits as the juices combine.
