Zucchini Chicken Casserole

Ingredients
  • 2 sticks butter, divided and melted
  • 2 boxes Stove Top stuffing mix, divided
  • 4-6 chicken breast tenderloins, baked and shredded
  • 6 cups chopped or shredded zucchini
  • 1 cup chopped or shredded carrots
  • ½ cup chopped onion
  • 16 oz sour cream
  • 1 can cream of mushroom soup
Instructions
  1. Bake the chicken breasts
  2. Shred or chop the chicken breasts
  3. Preheat oven to 350 degrees
  4. Melt one stick of butter in 9x13 pan
  5. Pour one box stuffing mix over melted butter, spread over dish
  6. Chop zucchini, carrots and onion
  7. Boil veggies in salt water for 5 minutes
  8. Drain veggies
  9. Add sour cream, soup and chicken to veggies - mix together
  10. Pour mixture over stuffing in baking dish
  11. Pour second stuffing mix over the top
  12. Melt stick of butter, drizzle over top
  13. Bake at 350 degrees for 30 minutes
