Enchilada Soup

Ingredients
  • ½ onion, chopped
  • 1 clove garlic, minced
  • 1 Tbs olive oil
  • 4-6 chicken breasts, baked and shredded
  • 1 14 oz can chicken broth
  • 2 10 oz cans mild green enchilada sauce
  • 1 10 oz can mild Rotel diced tomatoes with green chilies
  • 4 oz sour cream
  • 2 tsp cumin
  • 1 bag Knorr Fiesta Sides Spanish rice, cooked
  • shredded cheddar cheese (for topping)
  • cilantro, chopped (for topping)
Instructions
  1. Saute chopped onion in olive oil for 5 min
  2. Add garlic and continue to saute for 1 min
  3. Add to crock pot
  4. Add baked and shredded chicken to crock pot
  5. Add chicken broth, enchilada sauce, tomatoes, sour cream, and cumin to crock pot
  6. Stir well, turn on low
  7. Prepare Spanish rice following package directions
  8. Add rice to crock pot
  9. Cook on low for a few hours
  10. Add cheddar cheese and cilantro to top of bowls before serving
