Cilantro Lime Rice

- 2 Tbs olive oil
- ½ cup red onion, chopped
- 1 jalapeno, chopped, seeded and deveined
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 cup Jasmine rice
- 1½ cups chicken broth
- 1 10 oz. can black beans, drained
- 1 4 oz. can chopped green chilies
- 1 Tbs butter
- ½ cup cilantro, chopped
- 1 lime
- Sauté red onion and jalapeños in olive oil on medium heat for 3-5 minutes or until tender
- Add in garlic and sauté for about 30 more seconds
- Add in the cumin and rice, stir
- Add the chicken broth, black beans, and green chilies
- Bring it to a boil
- Reduce heat to low, cover, simmer for 20 minutes
- Remove from heat and let it sit for 5 minutes
- Stir in the butter until melted
- Add a little salt and pepper
- Add in the cilantro and lime juice
