Cilantro Lime Rice

Ingredients
  • 2 Tbs olive oil
  • ½ cup red onion, chopped
  • 1 jalapeno, chopped, seeded and deveined
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 cup Jasmine rice
  • 1½ cups chicken broth
  • 1 10 oz. can black beans, drained
  • 1 4 oz. can chopped green chilies
  • 1 Tbs butter
  • ½ cup cilantro, chopped
  • 1 lime
Instructions
  1. Sauté red onion and jalapeños in olive oil on medium heat for 3-5 minutes or until tender
  2. Add in garlic and sauté for about 30 more seconds
  3. Add in the cumin and rice, stir
  4. Add the chicken broth, black beans, and green chilies
  5. Bring it to a boil
  6. Reduce heat to low, cover, simmer for 20 minutes
  7. Remove from heat and let it sit for 5 minutes
  8. Stir in the butter until melted
  9. Add a little salt and pepper
  10. Add in the cilantro and lime juice
