Ya’ll have probably had sweet cinnamon-y zucchini bread. It’s pretty popular and delicious. But have you ever tried savory zucchini bread with, yes — cheese!? It’s also delicious, but not as popular. So I figure I should give it some spotlight because it deserves just as much popularity!
Savory Zucchini Bread
Let’s get right to the recipe since I know that’s what you’re here for!
- 1½ cups zucchini, shredded
- ¼ cup green onions, sliced
- 2 eggs
- ¾ cup sour cream
- ¼ cup butter (4 Tbs), melted
- 1½ cup cheddar cheese, shredded
- 2 cups flour
- 2½ Tbs parsley, chopped
- 1 Tbs garlic powder
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 Tbs butter, melted
- Preheat oven to 350 degrees.
- Mix together the zucchini, green onions, eggs, sour cream, and butter in a bowl.
- In a separate bowl, mix together the cheese, flour, parsley, garlic powder, baking powder, baking soda, and salt.
- Fold the dry ingredients into the wet ingredients.
- Pour mixture into loaf pan.
- Bake at 350 for 50 minutes.
- When it comes out of the oven, pour 2 Tbs melted butter on top.
A friend of mine shared this recipe with me and we doctored it up to make it even better. I love that we can use zucchini and green onions from our garden. Next year, I want to plant parsley too. I love making this bread to go along with other savory dinner options. I also think you could take out the parsley and add chopped jalepenos for a spicier twist to have with Mexican dishes. We haven’t tried that yet, but you should go for it and let me know.
Did you also know there are two kinds of zucchini? We planted both yellow zucchini and green zucchini. I think most people just use green zucchini, but the yellow ones are just a tad sweeter. So we like to use our yellow ones for our cinnamon, sweet zucchini bread and the green ones for this savory zucchini bread.
