Quick Sugar Cookies

Travis’ favorite kind of cookie is sugar cookies, and lately I’ve been on a any-kind-of-cookie kick. It seemed like the perfect time to make these quick sugar cookies. I got the recipe from my Aunt Traci, and they are seriously the best sugar cookies I’ve ever had. They really are easy to make, but best of all they are so soft. I love soft sugar cookies with not too much icing.

Here’s what you’ll need:

  • Flour
  • Salt
  • Baking soda
  • Shortening
  • Sugar
  • Vanilla
  • Eggs

That’s it. I imagine most of us have all of these things in our pantries already. That’s one of the things that makes this recipe so great and easy — it doesn’t require a trip to the grocery store.

How to Make Quick Sugar Cookies

You start by sifting together the flour, salt, and baking soda. Next, in a separate bowl — I used my KitchenAid mixer to make these even quicker and easier — cream together the shortening, sugar, vanilla, and eggs.

Combine the two mixtures. A soft dough should form. Divide the dough in half and roll it out on a floured surface. Here’s the trick — do not roll this dough out too thin. You want the dough to be thick so the cookies will be soft.

Cut into shapes using cookie cutters. I just made hearts when I was making the recipe. But I love that I have 101 cookie cutter shapes to choose from! We got this set as a gift for our wedding, and it comes with every holiday shape you can imagine!

Bake them at 350 degrees for only 10 minutes! Once they have cooled, you can frost them and add sprinkles.

Ingredients
  • 4 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup shortening
  • 1½ cups sugar
  • 1 tsp vanilla
  • 3 eggs
Instructions
  1. Preheat oven to 350 degrees.
  2. Sift together the flour, salt, and baking soda.
  3. In a separate bowl, cream together the shortening, sugar, vanilla, and eggs.
  4. Combine the two mixtures until soft dough forms.
  5. Divide the dough in half and roll out onto floured surface.
  6. (Do not roll out too thin - see photo for example)
  7. Cut into shapes using cookie cutters.
  8. Bake at 350 for 10 minutes.
  9. Once cooled, decorate away!
