Whole Wheat Dark Chocolate Chip Oatmeal Cookies
If you follow me on Instagram, you saw that Raylee and I made these whole wheat cookies recently. They are my favorites! My mother-in-law always makes them and keeps bags of them in her freezer. I love eating them straight from the freezer, especially in the summertime. I really wanted to make a big batch of these to keep in our freezer before Ruthi arrives. I knew they would be a great pick-me-up type snack for me to quickly and easily grab between motherhood duties. Plus, since they contain oats I figure they can only help with lactation. These cookies are made with whole wheat flour, Continue Reading

Quick Sugar Cookies
Travis' favorite kind of cookie is sugar cookies, and lately I've been on a any-kind-of-cookie kick. It seemed like the perfect time to make these quick sugar cookies. I got the recipe from my Aunt Traci, and they are seriously the best sugar cookies I've ever had. They really are easy to make, but best of all they are so soft. I love soft sugar cookies with not too much icing. Here's what you'll need: Flour Salt Baking soda Shortening Sugar Vanilla Eggs That's it. I imagine most of us have all of these things in our pantries already. That's one of the things that makes this Continue Reading

Salmon Patties
I was 21 when I finally tried salmon for the first time. Of course, Travis is the one who got me to try it. I didn't think I liked any seafood except shrimp at the time. Turns out, I love all sorts of seafood and salmon is my favorite fish of all time. You can ask my friends, I seriously order salmon at every restaurant that offers it! My sister-in-law made me salmon patties once, and I was in love. I used her recipe and a recipe I found online, mashed them together, and created my own delicious salmon patties. I love making them because 1) they are easy to make, 2) they are delicious, and Continue Reading
Fried Cinnamon Bananas
I love dessert. It's safe to say I'm obsessed and addicted to dessert. So when I can find a dessert that's actually pretty good for you, well, it's a winner! Bananas are full of potassium, and they also have calcium and Vitamin A. Cinnamon is loaded with antioxidants, has anti-inflammatory properties, and it's said to reduce the risk of heart disease. Put the two together and you've got one healthy dessert, not to mention a great tasting one too! I made this recipe as a snack for Travis and I one Sunday, but we both agreed it would taste amazing on top of ice cream for a full on dessert. Continue Reading
Cajun Chicken & Veggies
We have a new favorite meal! I make a ton of this cajun chicken & veggies because we both love to eat a lot of it, and Travis loves to take it in his lunch the next week. I love how flavorful the dish is. It's a got a small kick to it too, but nothing you can't handle. My favorite part of this meal is how easy it is to make. I don't have to do any planning or a ton of prepping other than chopping a few veggies. It means its easy to make as a last minute meal when I suddenly realize it's suppertime and there's nothing in the crock pot! Try this Cajun Chicken Dish Here's what you'll Continue Reading
Cilantro Lime Rice
Cilantro lime rice seems to be a staple with Travis' side of the family. And I am not complaining. Travis and his family are competitive, and he loves to compete with his sisters at basically everything. His sister Mindy is a great cook, so of course Travis challenges that. They have had a couple different cooking competitions over the years. In fact, the first time I ever met his family was at one of their cooking competitions. This past Christmas, Travis and I challenged Mindy to a cook-off. We wanted to make cilantro lime rice because we discovered a great recipe for it while I was in Continue Reading
