My mother-in-law made something like this awhile back, and I loved it. Ever since, I've been on a honey mustard kick! Travis and I started making this honey mustard chicken dish together, and we love it! Plus, it's really easy to make so that's always a pro. Here's what you'll need: Chicken breasts Dijon mustard Honey Lemon juice Mayo Soy sauce How to Make Honey Mustard Chicken We start by pounding out the chicken. Be sure it's room temperature and has been patted down with a paper towel. Get your cast iron skillet hot. Season your chicken breasts with salt and pepper on both Continue Reading
Salmon Patties
I was 21 when I finally tried salmon for the first time. Of course, Travis is the one who got me to try it. I didn't think I liked any seafood except shrimp at the time. Turns out, I love all sorts of seafood and salmon is my favorite fish of all time. You can ask my friends, I seriously order salmon at every restaurant that offers it! My sister-in-law made me salmon patties once, and I was in love. I used her recipe and a recipe I found online, mashed them together, and created my own delicious salmon patties. I love making them because 1) they are easy to make, 2) they are delicious, and Continue Reading
Cajun Chicken & Veggies
We have a new favorite meal! I make a ton of this cajun chicken & veggies because we both love to eat a lot of it, and Travis loves to take it in his lunch the next week. I love how flavorful the dish is. It's a got a small kick to it too, but nothing you can't handle. My favorite part of this meal is how easy it is to make. I don't have to do any planning or a ton of prepping other than chopping a few veggies. It means its easy to make as a last minute meal when I suddenly realize it's suppertime and there's nothing in the crock pot! Try this Cajun Chicken Dish Here's what you'll Continue Reading
Mexican Chili
This recipe is really simple! We loved eating it by dipping tortilla chips in it. It's very thick and hearty, perfect for dipping! First, brown the hamburger with the chopped onion until the meat is brown and the onion is clear. You don't have to drain it as long as your meat was pretty lean. Throw the mixture into your crock pot. Add in the rest of the ingredients. The only one you need to drain is the can of corn and the can of kidney beans. Cook on low for about 3 hours. Serve this dish with shredded cheddar cheese, chopped cilantro, chopped green onions, and/or sour cream for Continue Reading
Tomato Basil Pasta
My mom shared this recipe with me, and it sounded delicious. So I tried it out for myself, and it was definitely a winner. This Tomato Basil Pasta is easy to make and has lots of flavor. Here's what you'll need: Spaghetti -- I used veggie pasta, but you can use any regular or whole wheat Cherry tomatoes Garlic Basil leaves Olive oil Chili pepper flakes Salt and pepper Start by cutting the cherry tomatoes in half. Chicken Salad with Grapes
I never knew I liked chicken salad until one day I had a little of my mother-in-law's while we were taking a road trip. I was hungry and it was my only option, so I tried it. And low and behold it was actually pretty good. This summer, I tried more chicken salad, and again I liked it. And just a couple weeks ago, my mom took me to a local restaurant where she had been going on and on about their chicken salad. I got some and fell in love just like she had. It was delicious! In fact, I went back again another day, all by myself, for more. I wanted to recreate this amazing chicken salad if Continue Reading
How to Fry Fish
My husband loves deep sea fishing. He and his dad try to go together every year. They bring home a whole lot of fish to freeze and eat all throughout the year. Travis is always the one who makes fish for dinner because he's just the best at it. I decided it was time for him to share his secrets with ya'll! Here's what you'll need: Fish filets - we used Red Snapper, but you can use any type of fish, fresh or frozen (be sure it's thawed) Old Bay Seasoning Fish Rub Seasoning Whole Wheat Flour Vegetable Oil Coconut Oil Travis starts by adding the two seasonings to the fish filets, Continue Reading
French Toast Casserole
Some friends of ours are in the process of adopting five little people. All of the kids are moved in and the overwhelming transition period has begun. My friend went from being a married woman to a mother of five (six if you count her husband!) -- all in a matter of weeks. I know there are moments when she feels stressed from all the scheduling, overcome with tasks and tantrums, and down right exhausted from trying to handle it all with a smile. It's a huge change for her and her husband. But they long to give these five children, who they have fallen in love with, a place to call home and a Continue Reading
Chicken N’ Dumplings
I can't believe how easy this recipe is, and yet it still turned out tasting delicious! This for all of us who don't have time to make dumplings from scratch, but still want that home cooked taste! Here's what you'll need: Chicken broth Chicken Canned biscuits (Tip: Don't use the flaky layers biscuits because the dish will turn out mushy. If you use regular home style biscuits, it turns out just right!) Cream of chicken soup Pepper Bring the chicken broth to a boil. Add in the shredded baked chicken. Turn the heat to medium. Cut the biscuit dough into quarters. Add these to the Continue Reading
Italian Beef
Sometimes I feel like all we eat is chicken around here. Probably because I don't like hamburger, as I've told you before. But I do like beef. Just not in hamburger form. So I started making Italian beef, and it is delicious! It is juicy and flavorful and has a zip to it! Here's what you'll need: Roast (round or rump) Italian dressing mix Banana pepper rings Onion Garlic First, put the roast in your crock pot. Sprinkle the Italian dressing mix on top. Pour the whole jar of pepper rings on top -- peppers and liquid. Mince the garlic and put it inside the crock Continue Reading
French Dips
When Travis came home from the field, I wanted to make him one of his favorite meals. I welcomed him home with French Dips, Hash Brown Casserole and Cookie Dough Pizza for dessert. It's safe to say he was very pleased. Since I've already shared the other recipes, it's time to share how to make French Dips -- courtesy of my mother-in-law. Here's what you'll need: Roast Water Soy Sauce Rosemary Thyme Garlic Powder Bay Leaf Peppercorns Sub Buns This recipe is so easy to make. Creamy Chicken N’ Rice
I love easy recipes. I love slow cooker recipes. This chicken n' rice dish is both. And it's delicious and creamy, warm comfort food -- perfect for fall or winter. Every time I've made this recipe, my husband goes on and on about how good it is and then says, "Have you made this before?" I've made it at least three times and each time he asks if it's new! :) Here's what you'll need: Chicken, defrosted Chicken broth Cream of mushroom soup Knorr chicken rice mix First, defrost your chicken. Since it's just me and my husband, I use four chicken breast tenderloins. Continue Reading
