When I think of October, I think pumpkin. But alas, October is over. That's OK, though, because we are still in the middle of fall and that means pumpkin is still allowed. Last month, I shared the recipe for pumpkin chocolate chip cookies. This month, I'm sharing a recipe for another fun pumpkin dessert. Pumpkin chocolate chip dip! It's like cookie dough, but better because you are supposed to eat it! No guilt. No salmonella. Yay! Here's what you'll need: Butter Brown sugar Cinnamon Nutmeg Vanilla Pumpkin puree Flour Chocolate chips Considering it's fall, I'm guessing Continue Reading
Mexican Chili
This recipe is really simple! We loved eating it by dipping tortilla chips in it. It's very thick and hearty, perfect for dipping! First, brown the hamburger with the chopped onion until the meat is brown and the onion is clear. You don't have to drain it as long as your meat was pretty lean. Throw the mixture into your crock pot. Add in the rest of the ingredients. The only one you need to drain is the can of corn and the can of kidney beans. Cook on low for about 3 hours. Serve this dish with shredded cheddar cheese, chopped cilantro, chopped green onions, and/or sour cream for Continue Reading

Queso Dip
One of my new favorite foods is queso! I love going to Mexican restaurants now, specifically for their chips and queso. I wanted to be able to make this delicious dip at home, and now I can. This recipe is fabulous! Travis and I love chowing down on chips and queso while watching TV or a movie. We refrigerate the leftovers and heat it up later -- and it's still just as good! Here's what you'll need: White American cheese Butter Milk Chopped green chilies Garlic powder Onion powder Cumin Cayenne pepper First, put the cheese, butter and milk together in a saucepan Continue Reading
Spinach Artichoke Dip
I've never liked spinach artichoke dip. But Travis loves it. Since he was in eye surgery recovery and home for the day from work, I wanted to make him some. And it turns out, even I really liked it! I really loved the cheesy, garlicky spinachness of this dip. And this recipe made a ton, so we'll be eating it for days. You can eat this dip with tortilla chips, pita chips, bread or crackers. Here's what you'll need: Butter Sour cream Cream cheese Parmesan cheese Artichoke hearts Spinach Garlic Jalapenos Start by preparing your ingredients. Drain the artichoke hearts Continue Reading
Black Bean Salad
This is one of my favorite recipes. I was so excited to make it for Travis while I visited him in Georgia. I think it's fairly easy to make — just a lot of chopping — and it has a delicious and fresh taste. We use tortilla chips and eat it like a dip or salsa. I think it's healthy too! Protein and veggies.
